Southern Fried Chicken
2 frying chickens -- cut in pieces
1/2 teaspoon hot pepper sauce
1 cup flour
Salt -- to taste
1 teaspoon ground black pepper
4 cups oil
1/2 pound butter
Place the chicken pieces in a large mixing bowl and add milk to cover. Add the
hot pepper sauce and refrigerate for 1 hour or so. Combine the flour, salt, and
pepper in a heavy paper bag or large plastic bag. Shake to blend.
Use two large heavy skillets. Heat half the oil 1/4 pound of butter in each skillet.
Do not drain the chicken. Take one piece at a time and shake it in the bag until
well coated. Place in skillets and cook until golden brown on one side. Turn and
cook until brown on the other side. When done, drain on paper towels.
