Grilled Apple Chicken
Ingredients:
8 boneless, skinless chicken breasts
12 ounces frozen apple juice concentrate, thawed
1/3 cup honey
2 tablespoons lemon juice
1/4 cup brown sugar
2 teaspoons cinnamon
3 Granny smith apples, corned and cut into rings
Directions:
Mix apple juce concentrate, honey, lemon juice, brown sugar and cinnamon in
a saucepan. Heat over medium heat about 3 minutes, stirring. Set aside 1 cup
to use as sauce. Use remaining for baste.
Put apple rings on grill and brush with basting sauce. Grill 8 minutes, basting
often. Turn apples over and baste and grill for 8 to 10 minutes or until tender.
Meanwhile, place chicken on grill. Brush with basting sauce. Grill for 5
minutes, basting often. Turn and grill for an additional 5 to 7 minutes or until
internal juices run clear.
Serve chicken and apples with reserved sauce and steam veggies
